Meat Balls:
1 lb. italian sausage
1/4 c. breadcrumbs
4 cloves garlic
1 egg
4 T chopped parsley
5 T parmesan cheese
1/4 c. chopped green onion
Mix all ingredients. Roll them into golfball sized meatballs and place them in a 350 F oven until the outside is cooked. Pour the grease from the meatballs into a soup pot. If there is not enough grease, use olive oil.
Soup:
1 Qt. vegetable stock/chicken broth
1 C. chopped green onions
1/2 C. chopped celery
1/2 C. chopped carrots
1/2 box small pasta
1 bag cleaned spinach leaves
Heat the grease from the meatballs or olive oil. Saute the carrots until tender, then onion, then celery. Add meatballs and the chicken stock. Bring to a boil and add pasta. After the pasta is soft, add spinach and serve.
