Sheryl's Pumpkin Cookies


2 C. Butter or Margarine
2 C. Sugar
1 (16 oz.) Can Pumpkin
2 Eggs
2 tsp. Vanilla
4 C. Flour
2 tsp. Baking Powder
1 tsp. Salt
1 tsp. Baking Soda
2 tsp. Cinnamon
1 tsp. nutmeg
½ tsp. All-Spice
1 pkg. Chocolate Chips
1 C. Nuts, Chopped (Optional)
2 C. Raisins (Optional)
Preheat oven to 350˚ F.
Cream shortening and sugar. Add pumpkin, eggs and vanilla. Beat Well.
Stir together flour and next 5 ingredients, then add to mixer. Mix well. 
Stir in chips, raisins or nuts. Drop rounded teaspoons onto cookie sheet. Bake for 12 to 15 minutes. Cool on rack. Tasty with a touch of frosting. 
Makes approximately 7 dozen.
