1 lb. Ground Beef
½ C. Onions, Chopped
6 C. Water
1 (16 oz.) Can Stewed Tomatoes, Undrained (optional)
2 (16 oz.) Cans Black Beans, Undrained
1 (16 oz.) Can Tomato Sauce
1 (16 oz.) Can Corn
1 (15/8 oz.) Envelope Taco Seasoning Mix
In a large saucepan cook ground beef and onion until meat is browned, drain off excess fat. Add the water, tomatoes, black beans, tomato sauce, corn and taco seasoning mix. Simmer the soup, covered for 15 minutes. Add avocado just before serving. Serve with cheese, sour cream, avocado and corn chips.
