Mary's Omelets

2 Eggs
Milk (if desires)
Butter for the pan
Salt and Pepper to Taste
Omelet filling

Rub lots of butter over the pan (you want to fry the eggs in the butter.) Whisk eggs till yellow and white completely combined (the eggs will end up a light yellow color.) Heat pan on medium high. Drop a small bit of the egg into the pan, if it cooks instantly the pan is ready. Pour whisked eggs into pan, DO NOT STIR OR TOUCH. When the bottom of the eggs solidifies (test: when the pan is shifted back and forth the eggs slide easily along the bottom of the pan) cover top with salt, pepper and desired filling. When you close the omelet the rest of the eggs will cook themselves.
