Vanishing Oatmeal Cookies (Healthy Variation)


1 C. Butter, Softened
1/2 C. Oil
1 C. Firmly Packed Brown Sugar
½ C. Agave
4 Eggs
2 tsp. Vanilla
4 C. Whole Wheat Flour
2 tsp. Baking Soda
2 tsp. Cinnamon
1 tsp. Salt (Optional)
6 C. Quaker Oats, Uncooked
Chocolate Chips or Cranberries (Optional)
Heat oven to 350˚ F.
Beat together butter, oil and sugars and agave until creamy. Add eggs and vanilla; beat well.
Add combined flour, baking soda, cinnamon and salt; mix well.
Stir in oats and chocolate chips or cranberries (if desired); mix well.
Drop by rounded tablespoonfuls onto ungreased cookie sheet. Bake 10 to 12 minutes or until golden brown.
Cool 1 minute on cookie sheet; remove to wire rack.
Bar Cookies: Bake 30 to 35 minutes in ungreased 9x13 metal baking pan.
