½ C. Onion, Chopped
4 Tbsp. Butter
2 Tbsp. Flour
1 (8 oz.) Velvetta Cheese
3 Eggs
¼ tsp. Garlic Salt
2 pkgs. Broccoli, Parboiled or Frozen
20 Ritz Crackers
Sauté onion in butter and add flour (if using fresh parboiled broccoli don’t add flour), cheese and eggs, stirring constantly. Add salt and broccoli. If using frozen broccoli, stir until broccoli is thawed.
Cover bottom of casserole dish with half of the crushed Ritz Crackers, add broccoli mixture, and top with crushed Ritz Crackers. Spoon some melted butter over the top if desired.
Bake 45 minutes or till set at 350˚ F.
